Lemony Sumac Pie with Ritz Cracker Crust

For the Crust: – 2 cups crushed Ritz crackers (about one sleeve) – 1/4 cup granulated sugar – 1/2 cup unsalted butter, melted

For the Filling: – 1 can (14 ounces) sweetened condensed milk – 3 large egg yolk – 1/2 cup freshly squeezed lemon juice – Zest of 2 lemon – 1 tablespoon ground sumac

Step 2: Preheat the Oven Preheat your oven to 350°F (175°C). Grease a 9-inch pie dish with butter or non-stick cooking spray.

Step 3: Make the Crust In a medium-sized bowl, combine the crushed Ritz crackers, granulated sugar, and melted butter. Stir until the mixture resembles wet sand and holds together when pressed.

Step 4: Press the Crust into the Pie Dish Transfer the crumb mixture into the prepared pie dish. Using your fingers or the back of a spoon, press the mixture firmly and evenly onto the bottom and up the sides of the dish to form the crust.

Step 5: Bake the Crust Bake the crust in the preheated oven for 10-12 minutes, or until lightly golden brown. Remove from the oven and let it cool slightly while you prepare the filling.

Step 6: Make the Filling In a large mixing bowl, whisk together the sweetened condensed milk, egg yolks, lemon juice, lemon zest, and ground sumac until smooth and well combined.

Step 7: Pour the Filling into the Crust and Bake Pour the lemony sumac filling into the partially baked Ritz cracker crust, spreading it out evenly. Return the pie to the oven and bake for an additional 15-20 minutes, or until the filling is set around the edges but still slightly wobbly in the center.

Step 8: Chill and Serve Remove the pie from the oven and let it cool completely at room temperature. Once cooled, transfer it to the refrigerator and chill for at least 2 hours, or until fully set.

Step 9: Serve and Garnish Before serving, optionally garnish the pie with a dollop of whipped cream and lemon slices for a decorative touch. Slice and serve chilled, enjoying the unique and vibrant flavors of this Lemony Sumac Pie with Ritz Cracker Crust!
